Observation: 1. Drain stopper for sanitizing compartment at three-compartment sink not functional. Other available drain plug does not fit this compartment. Plastic was being used to help facilitate drain stopping. *CORRECTED*
2. Missing and/or broken tiles observed near entrance to walk-in cooler and also underneath the fryers.
Corrective Action(s): 1. Replacement drain stopper obtained during inspection (functional). Ensure suitable, functional drain plugs are always available to faciliate proper manual ware washing. Replace as necessary. *CORRECTED*
2. Resurface affected areas to provide a surface that is smooth, durable, non-slip, and suitable for the intended purpose. Areas with broken/missing tiles may allow for the accumulation of liquid and/or debris. Ensure areas are being cleaned routinely to limit accumulation of liquid/debris. Date to be corrected by: December 14, 2023.

Routine health inspection.
Coolers at 4 degrees C or less.
Freezers at -14 to -20 degrees C. Note: Fry cooler (-14 degrees C) in more frequent use.
Hot holding internal food temperatures at 60 degrees C or more. Time tracking system also in place.
Temperature logs maintained.
Probe thermometer available on site for internal temperature checks.
Portioned food is covered and labeled.
Raw and ready-to-eat separated.
Hot and cold running water, liquid soap, and paper towels in place for hand washing.
Proper hand washing and glove use practices observed at time of inspection.
Three compartment sink is supplied with hot and cold running water. Detergent and sanitizer available from dispensing unit.
Food contact surface sanitizer available from dispensing unit, in buckets and spray bottle at 200 ppm quats.
No signs of pest activity observed, with the exception of small flies concentrated in the office area. Pest control measures as recommended by pest control technician are being employed to mitigate small fly population.
Pest control program in place. Premises serviced on a monthly basis.
