Observation (CORRECTED DURING INSPECTION): Cooked rice stored at room temperature at 22C. The operator stated that the rice is being cooled prior to storing in the cooler at 4C.
Corrective Action(s): Store the cooked rice inside the cooler at 4C. All hot foods or cold foods must be stored at > 60C or <4C respectively.

Observation (CORRECTED DURING INSPECTION): 1) Thermometers inside the upright cooler near the front was completely soiled in grease.
2) Multiple handles of coolers (walk in, prep) soiled in grease and food debris.
Corrective Action(s): Clean the areas noted above. Implement a regular cleaning schedule to prevent build of grease on frequently contact surfaces.

Observation (CORRECTED DURING INSPECTION): Observed staff using the front handwashing station to drain water from bean sprouts.
Corrective Action(s): Do not use this sink for any food preparation. This is designated for handwashing only.

Observation: 1) Rice scoop stored inside lukewarm water.
2) Pots of soups, raw meats stored in pans stored directly on the floor of the walk in cooler.
Corrective Action(s): 1) Store rice scoops inside ice water and routinely change out the water to prevent bacterial growth.
2) Store all pots and pans of food on shelving units at min 15cm off the floor to prevent food contamination.
Correct by: Immediately.

- General sanitation satisfactory.
- Handwashing station supplied with cold/hot running water, soap, and paper towels.
- Surface sanitizer available in designated white buckets with presoaked wiping cloths at 100ppm bleach concentration.
- High temperature dishwasher achieved 71C at the plate's level during the final rinse cycle.
- Dry storage area has adequate space and wire racks. Dry food items must be stored min 15cm (6inches) off the floor.
- No signs of pest activity at the time of the inspection.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.

Temperature control:
- All coolers (walk in, prep, upright): < or = 4C
- All freezers (two chest freezers): < or = -18C
- Hot holding units (rice cookers): >60C
- Thermometers available in all coolers and freezers.
- Daily temperature log available and kept up to date.
