Observation (CORRECTED DURING INSPECTION): Soup in hot holding unit was at about 115F and in food temperature danger zone. Staff advise it had been reheated about 1 hour ago.
Corrective Action(s): Soup must always be cooked/reheated to 74C/165 F or hotter within 2 hours and then stored in pre-heated unit at 60C /140F or hotter. Soup was reheated to 74C + during inspection.

304 - Premises not free of pests [s. 26(a)]
Observation: Mice noted in monitoring trap in back main kitchen. Numerous mouse droppings noted on floor throughout premises and in cupboards and on prep table bottom shelf. Food mostly seems to be in pest proof containers or in coolers. Manager states there is a licenced pest control contract in place.
Corrective Action(s): Premises must be free of pests. Your pest manager program must include:
1. Immediately check all food containers, discard any contaminated food, and clean and sanitize container lids etc.
2. Clean and sanitize all utensils and items stored on bottom shelves.
3. Thoroughly deep clean kitchen and clean up food/water spills promptly. Clean patio area.
4. Seal all holes and keep doors closed.
5. Increase frequency of pest control and follow directions of licenced pest control expert.
6. Remove unneeded items to help with monitoring for pests.
7. Check traps daily.

Observation: Mice observed in back kitchen monitoring trap. Back door was open.
Corrective Action(s): Block all holes where rodents/mice may enter premises. This includes gaps or holes by plumping pipes and gap under side door. Keep all doors shut and if ventilation is a concern, provide a screen door.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Numerous mouse droppings noted. Accumulation of grease-like substance on back of wall behind flattop grill, panini machine, and grill. Wall is yellow in colour.
Corrective Action(s): Deep clean premises and clean floor in hard to reach areas/corners. Clean wall behind cooking equipment.

Comments

Coolers (walk in, large 2 door, prep/line cooler in main kitchen, bar cooler, coffee area prep cooler) - all are at 4 C/40F or colder.
Hot holding/reheating - see above.
Cooling of hot foods - is done in an ice water bath with stirring to quickly cool food.
Ingredient information available. Update list if ingredients change.
Manager on site advises has FoodSafe Level 1 certification <5 years.
Food safety plan - check to make sure it includes transport of food and reheating food. Manager advises temperature checks are on computer (not checked today).
No foods with raw eggs.
Wiping cloths are stored in chlorine solution of about 200ppm. good
Commercial dishwasher has a hot water final sanitizing rinse of 71 C measured inside of the machine and 82C/180F measured at the manifold gauge. good
