Observation (CORRECTED DURING INSPECTION): Large insert of: 1. Chili 2. Meat balls in hot holding unit is noted between 52 - 56 C with probe thermometer over 4 hours since products were re-heated. Water level noted very low in unit.
Corrective Action(s): Ensure all PHFs are maintained at or above 60 C in hot holding unit. Maintain appropriate water levels in unit to allow it to function properly. Both inserts of food were discarded during inspection and water levels topped up.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): 1.Panini press installed next to hand sink making it difficult for staff to reach the soap and paper towel dispenser on the wall. There is also a risk of burns for staff.
2. No paper towel or toilet paper noted in staff washroom
Corrective Action(s): 1.Re-locate panini press to another location as not to impede the use of the handsink and proper handwashing practices. Repeat violation. Contact EHO with proposed new location. Business card provided.

2. Ensure all handsinks and staff washrooms are supplied with hot & cold water, liquid soap and paper towel. Toilet paper should also be available to staff.

Observation: 1. 2 round drilled holes in lower wall behind middle prep table in front of walk in freezer.
2. gaps around the bottom and lower edges of the 2 back external doors
Corrective Action(s): 1.Ensure all holes are properly sealed to prevent possible pest entry and to allow for proper cleaning. Repair holes.
