CLOSURE ORDER RESCINDED - cleaning completed; ensure cleaning is maintained - rodent droppings have been cleaned - pest control has been in - forward a copy of the pest report to the undersigned - follow all recommendations; plug all points of entry - new traps laid - reminder that bait is for the exterior of restaurant only - back storage area re-organized - foods in pest proof bins General: - handwashing station stocked with soap, paper towels and hot and cold running water - sanitizer measured 200ppm quats - dishwasher measured 50ppm chlorine at the final rinse cycle - ice machine appears sanitary - wrap ice wand in saran wrap to prevent contamination prior to use Temperatures: - prep cooler: 4C** - monitor closely as this unit is directly across from cookline; keep lid down when not in use and service as necessary - upright white freezer: 1C - this unit needs to be defrosted to reach freezing tepmperatures - walk-in cooler 4C - walk-in freezer -15C - ice cream freezer - 17C - bar under counter cooler not in use Report not signed due to COVID-19 protocol.
