Observation: Some flies observed in the back room. Showed this to a staff member.
Corrective Action(s): Keep back door closed and improve your sanitation. Poor sanitation attracts pests.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Severe buildup of food and debris throughout kitchen. A thorough cleaning is required. The following areas were noted as not being in sanitary condition:
-Many of the buckets by the back entrance were covered in brown and black debris and were sticky
-Container with black liquidi inside, in upright cooler (across 3 comp sink) covered in debris. Cooler fan is also full of dust. Cooler racks are filthy.
-Floor throughout kitchen need mopping
-Buckets with red lids have old food debris
-Stainless steel countertop across from ovens has black dirt or debris on it
-Used baking sheets and trays left stacked in the racks are very dirty, with oil and old food debris caked on
Corrective Action(s): Clean all above mentioned areas thoroughly. While it is understandable that there is flour on the floor from the constant production of baked goods, much of the sanitation problems appear to be from neglect and lack of a routine cleaning schedule.
Food and debris that is caked on is often the result of this.

Observation: No one on site has valid FoodSafe certification. This is required for regular operation of your premises.
Corrective Action(s): As discussed, FoodSafe certificates issued before 2013 have all expired. Per regulatory requirements, there must be at least one staff on site at ALL times that has valid FoodSafe level 1 certification.

There are 2 display/showcase coolers in the front sale area with potentially hazardous food in them: both at 4 deg C or less
Upright cooler in kitchen by the 3 compartment sink: 1.8 deg C
Walk in cooler: 3.1 deg C.
All freezers are at -18 deg C or less
3 compartment sink with bleach available to sanitize
Bleach spray sanitizer in front area and in back area is at 100 ppm chlorine residual
Ensure health permit is posted in a conspicuous location for the public to see.
