Observation (CORRECTED DURING INSPECTION): **Repeated violation**
<10 PPM chlorine residual detected in the bleach sanitizer spray bottle, located nearby the meat slicer.
**Issue corrected at the time of inspection** Operator discarded the bleach sanitizer spray bottle and remixed the solution. 200 PPM chlorine residual was detected in the new mixed spray bottle.
Corrective Action(s): Obtain chlorine test strips to help determine if the right concentration of bleach solution has been mixed prior to using.

Observation (CORRECTED DURING INSPECTION): Missing paper towel noted in the paper towel dispenser nearby the dishwashing machine.
**Issue corrected at the time of inspection** Operator refilled the paper towel dispenser with single-use paper towel.
Corrective Action(s): Ensure all handwash stations are always equipped with hot and cold running water, liquid soap and paper towel.

1. Boxes of food products still noted on the floor in the walk-in freezer, in the dry storage area and along the corridor of the patrons' washroom.
2. Containers of broth stored uncovered in both the walk-in cooler and walk-in freezer.

Corrective Action(s): 1. All food products must be stored at least 6 inches off the floor to allow for proper cleaning and sanitation of the floor.
2. All food products in storage (including refrigeration units) must be stored covered/ protected with a plastic wrap or lid to prevent potential cross-contamination of food.

Observation (CORRECTED DURING INSPECTION): **Repeated violation**
Noted at the start of the inspection, a bag of tripes was being thawed in the 3-part sink with a small amount of cold water trickling from the faucet.
**Issue corrected during the inspection** Operator turned up the cold water going into the sink thawing the bag of tripes.
Corrective Action(s): When thawing, food products must be completely submerged under cold running water.

Mop water noted in the mop bucket.
**Issue corrected at the time of inspection** Operator discarded the mop water in the mop bucket.
Corrective Action(s): Discard dirty mop water from the mop bucket. The mop bucket must be immediately emptied after using to avoid attracting and breeding of pests.

1. Grease buildup still ntoed along the vent hood.
2. Grease, dust and debris noted in the cabinet of the deep fryer.
3. Dust noted on the ceiling by the vents upon entrance to the kitchen and above the dish machine.
4. Food debris still noted along the door gaskets of the reach-in cooler in the cook line.
5. Dust and organic buildup noted on the wall in the walk-in cooler.

Corrective Action(s): Wash, rinse and sanitize the abovementioned areas. Any grease or food debris buildup may become a source of food for pests.

1. Rona container being used in the walk-in cooler for the storage of broth. **Issue corrected at the time of inspection** Operator removed the Rona container.
2. Shelving in the walk-in cooler noted heavily rusted.

Corrective Action(s): 1. Only use food safe containers for the storage of food.
2. Replace the rusty shelves in the walk-in cooler. Shelving units must be smooth and in a condition that will allow effective cleaning and sanitation.

Follow-up inspection conducted for inspection report: KLAI-CCTS4W
Knives noted on the magnetic knife rack by the 3-part sink were noted in sanitary conditions.
No mouse droppings were observed in the dry storage room.

Many of the violations cited from the previous routine inspection were not corrected. Repeated violations from the previous routine inspection were also noted. Please address all outstanding violations before the next follow-up inspection. If improvements are not noted during the next follow-up inspection, progressive enforcement action may be taken.
