Routine inspection conducted and the following were noted.
Front sushi bar cooler and undercounter coolers were less than 4C.
Front hand washing stations satisfactory.
Chlorine sanitizer available in front sushi area. Ensure food preparing area is properly washed and sanitized at least every 4 hours.
Walk-in cooler and undercounter cooler in the kitchen area were less than 4C.
Chest freezers and standup freezers were less at -18C.
No pest activity noted
Chlorine dishwasher achieved a final rinse concentration of at least 50ppm. Ensure test strips are available to monitor chlorine concentration daily to ensure machine is in good working order.
Hand washing stations in the kitchen area was satisfactory.
Receipts available for sashimi products.
Discard old knives that are no longer used.
