Observation: Not cooling food in an acceptable manner.
Correction: Recommended cooling the meat sauce using clean ice wands. Use stainless steel of 99 degrees C rated NSF approved
containers for cooling hot sauces prior to refrigeration ( Immediately).

Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Internal temperature of pizza toppings( pepperoni, cheese) in top inserts of the preparation cooler ranged from 10-11 degrees.
All meat items were transferred to the bottom of the cooler.
Correction: Repair or adjust the cooler so that it is capable of maintaining all food items at 4 C or below at all times.( Immediately)

Observation: 1. Sanitizer at 0ppm chlorine - sanitizer replaced. Corrected during inspection.
2. Clean walk in cooler, cooling unit, fan covers, shelving and ceiling. Debris observed. Date to be corrected by: July 30/21

Correction: Discard meat products at elevated temperatures. Decrease quanitity of products in toppings cooler.
