Observation (CORRECTED DURING INSPECTION): Two buckets of rice are noted in stand up cooler, and outer surface of the buckets appeared warm. Temperature of one bucket is measured to be 27.8oC. Operator indicated rice is cooled for 30 minutes, then transferred to cooler.
Corrective Action(s): Proper cooling procedures should be followed:
1. 60oC to 20oC in 2 hours, in shallow containers, at room temperature
2. 20oC to 4oC in 4 hours, in cooler

Observation: Paper towel is present in staff washroom, but it's not in dispenser.
Corrective Action(s): Ensure paper towel in dispenser is available at handsink.

Observation: Bottom area of back kitchen chest freezer is around -12oC;however, closer to the top 0oC to -4oC is noted.
Corrective Action(s): Ensure freezer is working properly. Replace freezer if necessary.

Observation: A small gap is noted at the bottom on the back door.
Corrective Action(s): Seal gap to ensure pests cannot enter in facility.

Observation: Cleaning is required in certain areas as grease and debris are noted.
Corrective Action(s): Clean the following:
-->floor under dishwashing sinks
-->Tray rack

Dishwasher final rinse reaches at least 50ppm chlorine on plate
Bleach sanitizer in bucket is noted at 100ppm chlorine. Ensure sanitizer bucket is placed at the front kitchen, not at the very back.

Note:
1. Dough sheeter in facility appears to be worn out, and hard to clean. All surfaces of the sheeter should be able to be sanitized; however, it seems to be hard to achieve that. Please provide manufacturer's cleaning procedures for review. Do not use sheeter until further notice.
2. Facility is offering beverages such as coffee, tea, hot chocolate, and juices. There is no sink present at the front counter currently. Beverages must be made at the back kitchen.
