Observation (CORRECTED DURING INSPECTION): Cut tomatoes and cheese in inserts at preparation cooler internal food product temperatures 7-8 degrees C. Internal food product temperatures of food products in lower section at 6-7 egrees C. Operator stated this cooler is emptied out then stocked in the morning.
Corrective Action(s): Operator relocated all cold potentially hazardous foods. Service and ensure unit is capable of maintaining 4 degrees C or less at all times.

- Thorough cleaning is required along the cooking line. Focus cleaning efforts in between, behind, and underneath the cooking equipment.
- Clean all aspects of the exhaust canopy.

Corrective Action(s): Do not store any cold potentiall hazardous foods until unit is serviced and is capable of maintaining 4 degrees C or less. Place an accurate indicating thermometer inside.

Large chest freezer along south wall at -14 degrees C.
2 chest freezers in centre area of back food preparation area at or below -18 degrees C.
