Observation (CORRECTED DURING INSPECTION): * Several spoons were being stored in hand sink by ice cream station near back kitchen area; this has been discussed on many previous inspections as unsanitary practise; operator addressed immediately and staff are to be made aware again that this is unacceptable practise
Corrective Action(s): * Do not store food equipment in hand washing sinks-- these sinks are for hand washing only! Dirty food equipment to be taken to dishwashing area for cleaning/sanitizing-- NOT stored in hand sinks

Observation: * Build up of grime/debris found in some areas of kitchen particularly behind all grill/cooking line and some baseboards again. This is unsanitary practise and has been discussed on many previous inspection. Operator to address immediately and on regular schedule
Corrective Action(s): * Ensure ALL areas properly maintained in sanitary condition to remove all build up of grime/debris and maintain sanitary conditions

Observation: * Dry storage room walls are showing signs of paint deterioration and require repair; discussed repairs to these walls on previous inspection-- to upgrade to water proof material (eg. FRP board, etc) so that walls remain in proper working order and easy to clean/maintain
Corrective Action(s): * Ensure dry storage room walls repaired to proper surfaces that are easy to clean/maintain

* Dishwasher final rinse was minimum 50 ppm chlorine residual at plate surface
* Cold-holding units were 4'C/40'F or colder
* Hot-holding units were 60'C/140'F or hotter
* Hand washing stations had liquid soap and paper towels; Note: one hand sink had several spoons being stored in the sink-- not acceptable and unsanitary
* Monitoring records were available
* Note: cleaning to be done behind grill area and some baseboards again-- debris/grime building up
* Sanitizer was available and at 200 ppm quaternary ammonium concentration
* Freezer units were -18'C or colder
* Follow up inspection to be done in a week or so
