All handwashing stations are unblocked at time of inspection.
Individual scoops and tongs are available to dispense toppings.
Two larger soup stocks and three smaller pots of soup stocks on induction cooker were all over 60C
Temperature records are in place but discussed with manager onsite that temperatures should be able to be distinguished between food items (e.g. various soup stocks, inserts of meat etc.)
Quats sanitizer is available in the front line, with wiping clothes submerged inside at 200ppm Quats
Cleaning between the prep sink and wok station has been completed.
Staffs are now using the middle burner to store and simmer soup derived from pressure cookers on either side, allowing any steam to be absorbed through the exhaust hood directly above.
Reminder to use ice wands to cool soup as discussed - clean the ice wands after each use using the dishwasher
Also reminder to staff to place personal belongings in designated area rather than kitchen
