Corrective Action(s): Ensure a bucket of 100 ppm chlorine solution is available with wiping cloths to sanitize surfaces. Test strips available. Sanitizer solution must always be available during operation.

Observation (CORRECTED DURING INSPECTION): Large bowl of raw ground meat mix covered and stored on top of box of broccoli.
Corrective Action(s): Ensure raw meats are stored under and separate from ready to eat foods and produce.

Observation: 1. Wooden domestic knife holder used to hold knives.
2. Thin black foam used to cover large pot of stew in walk in cooler
Corrective Action(s): 1. Domestic knife holders can not be cleaned properly. Replace with commercial knife holder or magnetic holder. Owner has magnetic holder - will mount.
2.Ensure all covers are a material that is non-absorbent, smooth, easy to clean, durable or if single use is plastic wrap.

- No pest control on-site. Recommend having pest control company to protect premise from possible pests. No pest concerns at the time of inspection, no signs of pest activity noted.

*Keep ice scooper outside of unit in sanitary manner
-General sanitation satisfactory

-2 comp sink is primary handsink in back kitchen. Small side sink no longer used as a hand sink.
