Comments

-Ensure that the items kept on ice in the kitchen are fully submerged in ice to maintain a temperature of < 4 C. All coolers were < 4 C. All freezers were < -18 C. No evidence of pests. Dishwasher had 50 ppm chlorine. The glasswasher had 12.5 ppm Iodine. Temperature, dishwasher and glasswasher records kept daily. General sanitation was satisfactory.
