Observation (CORRECTED DURING INSPECTION):
Observed staff manually washing pots and pans and no sanitizing step done. When manually washing items, they must be sanitized using a bleach + water solution (1oz. bleach in 4L of water), then allowed to air dry.
Corrective Action(s):
Retrain staff on sanitizing procedures. At time of inspection, staff mixed-up a bleach solution that was 200ppm.

Observation:
1) There is a build up of grease on the floor beneath the cooking equipment, along the back wall. This grease will attract pests.

2) There are food stains on the walls in the dishwashing area. This will attract pests.
Corrective Action(s):
Clean the grease up and wash the walls, and increase the frequency at which this is done.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
1) The 1-compartment sink, in the food preparation area, has a leaking waste pipe. Pooling water will attract and harbor pests, and decreases the sanitation level.

2) There are sections of the walls in the dishwashing area and kitchen that have peeling paint, chipped corners, or exposed drywall. These surfaces will absorb grease and are not cleanable, this will attract pests.
Corrective Action(s):
1) Repair or replace the waste pipe so that it no longer leaks.

2) Repair and repaint the damaged wall areas.

Observation:
There is an accumulation of empty bottles in the storage room. Observed a few fruit flies in the room, due to the bottles.

Remove or recycle the bottles now, and increase the frequently you do this.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -35C; hot holding units above 60C; thermometers present; and temperatures monitored daily but not recorded.
- High temperature dishwasher rinse cycle was 71C at the plate's surface, as per max/min thermometer.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- Food storage done correctly. All foods stored in food grade containers, covered, in groups with raw proteins below RTE foods, and 6" off the floor on shelves.
- FoodSafe certified staff present. No signs of pests.
- No expired foods in use. FIFO rules followed.
- General sanitation level is good. No signs of pests.
- Sanitizer in spray bottle had [Cl2] of 200ppm.
