Observation: There is a large build up of food debris and dust under the shelves in the dry storage area. There is also a build up of food debris and grease under the cooking station.
Corrective Action(s): Clean the mentioned area, focusing on the hard to reach areas close to the wall. Do this more frequently to avoid build up, as per your sanitation plan.

Observation: The food prep. cooler in the kitchen is not functioning properly as the temperature is 8 degrees C.
Corrective Action(s): The temperature of this cooler must be at or below 4 degrees C. Move all the perishable food items to the cooler next to it and move the sauces from that cooler to the malfunctioning one until the cooler is fixed.
Correction Date: 1 month.

High temperature dishwasher reached 71 degrees C. during final sanitizing cycle.

Freezer temps operating at or below -18 degrees C.
Hot holding units operating at or above 60 degrees C.
Cooler & freezer organization is very good - good job!
