Observation (CORRECTED DURING INSPECTION): Top left drawer of 4 drawer cooler lowest ambient temperature measure was 9.5C.
Other drawers measure 5-6C ambient temperatures.
Corrective Action(s): Had staff move all the food to another working cooler and only use to hold food during lunch and dinner rush. Max storage time of potentially hazardous foods in this drawer is 2 hours until the cooler can maintain 4C or below.

Comments

- Ice machine now clean
- No unnecessary items stored where food is stored.
- No more ants are seen
- Roasted carrots now observed completely cooled and stored properly
- Sauce at the sauce bar by the grill probed two inserts, measured 4C or below. Please continue to maintain ice levels

Note:
- Manager has stated in email correspondence that there are plans on fixing the flooring at the back of the kitchen where it is currently peeling apart.
- Manager of restaurant has emailed EHO copies of his FOODSAFE certificate and a copy from back of house supervisor's. Please ensure there is always a staff with FOODSAFE on-site.
