210 - Food not thawed in an acceptable manner [s. 14(2)] Observation (CORRECTED DURING INSPECTION): Chicken wings were left out in the two-compartment sink for defrosting. Corrective Action(s): Chicken wings were placed back into the walk-in cooler. In the future, the following is required: - Use a strainer or equivalent and defrost under cold running water, or inside the walk-in cooler at all times - Do not leave chicken wings out at room temperature for defrosting - Reminder to always clean and sanitize the two-compartment sink prior to adding any food inside. Operator states that this was done earlier today before the chicken was placed inside the sink. Violation Score: 3

Follow-up inspection to routine conducted on January 28, 2019 (RPT#: JMAA-B8UU8H). The following was observed: Light in walk-in cooler replaced and functional Cooling racks have been adequately cleaned Ceiling tiles have been replaced with new ones (NOTE: One light cover still missing that needs to be replaced) The following still needs to be done: Debris still needs to be removed from shelving at the back of the walk-in cooler Operator has plans to re-paint the walls of the walk-in cooler as part of annual maintenance (to be done next month) Dish rack needs to be replaced (deadline was originally end of March, so you still have time to acquire the parts) Frame around the walk-in cooler has been cleaned, but rubber seal should still be replaced as discussed by end of March No other concerns at this time.
