Observation (CORRECTED DURING INSPECTION): No sanitizer bucket available. Wiping cloths were placed in the water.
Corrective Action(s): Correction: Sanitizer solution must be prepared every morning and available all the time (100 ppm chlorine or 200 ppm QUAT). Operator prepared the sanitizer and put wiping cloths into it during inspection.

Observation (CORRECTED DURING INSPECTION): Both of the handsinks were filled with dirty dishes/utensils during inspection.
This is an on-going issue.
Corrective Action(s): Correction: Handsink must be clear of items and use only for handwashing.

Observation: Grease build-up found on the canopy, on the fan at the back area.
Corrective Action(s): Correction: Remove the grease build-up from the above mentioned areas.

Observation: 1. Wiping cloth was found under the clean knives in the storage container.
2. Cardboard box was found on the ground in front of dishwasher.
3. Aluminum foil was found around the deep frier.
Corrective Action(s): Correction:
1. Remove the wiping cloth, which is not a designated tool that is used to hold knives.
2. Remove cardboard box as it is not easy cleanable and washable.
3. Remove the foil. (This is an on-going issue).
Correction date: 1 week.

Observation: The electric stove was used to fry salmon during inspection. The stove was located in front of the deep frier and has no ventilation system above it.
Corrective Action(s): Correction: The stove cannot be used to fry food, because the grease and oil that generated by frying cannot be ventilated properly. The stove can only be used to reheat food or cook miso soup/udon. All frying pans must be removed from the premises.
Correction date: 1 week.

Comments:
-Handwash stations stocked with liquid soap, paper towel and hot/cold water.
-All coolers are below 4 deg. C, all freezers are below -14 deg. C
-Hotholding unit above 60 deg. C, dishwasher 71.6 deg. C at plate level.
-No pest activity observed during inspection.
