Observation: Hand washing sink by walk-in cooler is not equipped with a paper towel dispenser
Hand washing sink at bar is missing a soap dispenser and paper towel dispenser
Correction: Provide the appropriate equipment at each hand washing sink to ensure sink has a liquid soap dispenser (pump style is adequate) and paper towel dispenser.

Discussed Sous Vide Food Safety Plan. Please ensure the following are covered
- Verification of Time & Temperatures throughout process for CUT Time, Equilibrium Time, Cooking, Cooling, Holding temp in cooler, Reheating for service
- Ensure logs maintained
- E-mailed to inspector at time of inspection. Will review and follow up

Ensure the following equipment is available for Sous Vide
- Food grade sous vide pouches and method for temperature to be checked without breaking the seal (i.e. membrane). Pouches available at time of inspection
- Digital probe tip thermometer accurate within +/- 0.1C - ensure this routinely calibrated. Thermometer available at time of inspection


Paper towel dispenser installed at back hand sink and front bar sink. Front bar sink is also now equipped with liquid soap dispenser
Roast beef cooked via sous vide is stored in ice in walk-in cooler
1DR Cooler has been replaced and replacement cooler tested at 2.9C
Chlorine test strips on-site for dishwasher
