Monitoring logs being maintained Quat sanitizer at 200ppm. Ensure sanitizer is changed every 2 hours and wiping cloths are fully submerged in the sanitizer. *As discussed ensure ice baths are always used to rapidly cool gravy and sauces as discussed. Glasswasher at 148F and approx. 80ppm chlorine. Soap dispensed into wash tank Liquid soap and paper towels at hand sink New ice machine installed approx. 2 months ago. Dishwasher at 120F and approx. 100ppm chlorine. Soap dispensed in wash cycle. All cold holding equipment cold holding at <4c Hot holding at >60c
