Routine inspection

- Hand washing station maintained.
- Cooling units measured at or below 4 degree C. Cooler with inserts measured just above 5 C. Ensure to monitor temperature for this cooler. Do not overload cooler and rotate stock frequently.
- Freezers measured at -18 C or colder. Some frost build ups observed in chest freezers. Ensure to clean and maintain.
- Hot holding measured at 68 degree C.
- General sanitation is overall good.
- Bleach-water solution available as sanitizer. Ensure to follow instruction to make solution to 100-200 ppm. One cap of 5% household bleach in a gallon of water. Keep wiping cloths in the solution.
- No sign of pest activity observed at this time.
- Dry storage maintained. All food are to be stored 6" above floor.

Reminder:

- Use one batch at the time for spring rolls and do not leave fillers in room temperature long. Keep fillings in refrigerators.
- Range and ovens hood noted with some grease and build ups. This exhaust hood is to be cleaned and be free of excessive grease and dust.
- Clean chest freezer from frost build ups and maintain.
