Observation (CORRECTED DURING INSPECTION): Cold potentailly hazardous food prodcuts stored in the walk-in cooler measured with an internal food product temperature of 7.5C. The products were stored inisde the cooler this morning.
Corrective Action(s): Operator adjusted the temperature switch for the walk-in cooler. After 20 mintues, the temperature for the cold potentailly hazaroud food item decreased to 4C. Ensure cooler temperature is maintained at 4C or less at all time.

303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation (CORRECTED DURING INSPECTION): No hot water available at all sinks at the time of the inspection. Operator stated the he forgot to turn on the hot water switch today.
Corrective Action(s): Operator turned on the hot water tank switch. After 30 mintues, hot water was available at all sinks. Do Not turn off the hot water tank during the night time!

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Dirty utensils were stored at the basin of the hand washing station.
Corrective Action(s): Remove the dirty utensils from the aforementioned hand washing station immedately. Do not store any utensil at the hand washing station.

101 - Plans/construction/alterations not in accordance with the Regulation [s. 3; s. 4]
Observation: Operator is performing alteration to the storage area without any health approval from the Environmental Health Officer. The ceiling and the wall for the room had been removed. The room was in direct contact with the outside environmental. 2 chest freezers and the entrance for the walk-in cooler were located at this storage area.
Corrective Action(s): Submit the updated floor plan to the Environmental Health Officer for health approval before altering any area on the premises. Move the freezers into the building or install a lock on each freezer.

Observation (CORRECTED DURING INSPECTION): 2 bins of rice were stored at the storage area in direct contact with outside environment.
Corrective Action(s): Move the 2 bins of rice into the building. Do not store any food product in direct contact with the outside environment.

Observation: Shrimps observed to be thawing in a bowl at room temperature. Internal food product temperature measured at 3C.
Corrective Action(s): Operator moved the shrimps into the cooler. Do not thaw food at room temperature. Frozen food can be thawed under cold running water, inside a functionan cooler or with microwave.

- High temperature dishwasher registered 73C at the plate level
- Ice machine maintained in a sanitary condition.
- No pest activities observed at the time of the inspection.
