Observation: Some pots, pans and woks observed stored on floor and/or under designated dishwash areas.
Corrective Action(s): Do not store any food or food contact surface directly on floor or in areas subject to contamination. Relocate food equipment to shelves as discussed.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Several areas of the premises not adequately cleaned and include, but are not limited to:
- Floor in front bar area especially under work counters;
- Backsplash, adjacent ledge and general hard-to-reach areas in front bar section;
- Floor under dish sinks/dishwasher, under shelving units, and in walk-in cooler;
- Several walls and work areas in around kitchen suffering an accumulation of food debris and are not cleaned well or often enough.

Corrective Action(s): Clean identified areas of the kitchen and update sanitaion plan accordingly to ensure cleaning staff are aware of complete cleaning responsibilities. Complete by follow up inspection date.

Comments

Recommend the dishwasher (inside) gets a thorough descaling/degreasing to ensure long-term function.
No spray pesticides may be used in food premises unless applied by certified pest control (pc) technician. Any pest control activities must only be done by a PC technician.

Pooled eggs is not recommended. Minimize egg volumes, store reservoir in ice bath and if possible move to a pasteurized egg product for this use.

Temperature controls for hot holding and cooling OK.
Dishwasher and sanitizer buckets for surface sanitizing measuring adequate chlorine concentrations.
