Observation (CORRECTED DURING INSPECTION): Wiping cloth is not sanitized throughout the day.
Corrective Action(s): Sanitize the wiping cloth, using a sanitizing solution such as 1 tsp domestic bleach in 1 litre of water (200ppm chlorine). Wiping cloth is to be soaked in sanitzing solution and food contact surfaces are to be sanitized every 2-4 hours throughout the day.

Comments

Coolers: Large glass door <4 C, domestic white cooler <4 C, Beverage Air cooler <4 C , and small bar cooler <4 C - all are satisfactory.
Temperature records for coolers are being kept - good.
Mayonnaise (commercial) store in fridge or discard after shift.
Hot holding - soups are at >60 C - good.
Chlorine bleach - is used to sanitize surfaces - see above regarding wiping cloth and concentration for sanitizing solution. Extra bleach is on site.
Commercial dishwasher has a final hot water sanitizing rinse (after ready light came on) of 100 C at the gauge and 71 C inside of the machine. Check for the ready light to be on and 100 C at the gauge to verify temperature of sanitizing rinse for dishwasher.
Operator has a valid Food Safe certificate - until 2023.
Premises is being routinely cleaned. Add cleaning of filters above the stove to your written cleaning schedule. These need to be routinely cleaned as discussed.
