Observation: -Rodent droppings noted on floor in dry storage room, beside front cooler and on shelving where boxes of packaged take out cutlery stored.
Corrective Action(s): -Immediately clean up all droppings and use bleach solution to sanitize area. Continue to monitor for further activity.
-Remove all moveable items (bins, boxes etc) from the floor area to faciltate cleaning and to allow for regular monitoring.
-Put dry goods in pest proof containers
-Retain Pest Control services to address issue. Follow instructions of Pest Control technican. Seal up any gaps or entry points. Correction date: Feb. 16/18

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: -Dirt, debris noted on floor of dry storage room/area under tiles. Tiles are broken and not fixed in place therefore floor is not continuous and cannot be properly cleaned. This was first identified in Oct. 2016 and has not been addressed.
-Small particles of food debris (eg. rice) noted on shelving throughout premises.
Corrective Action(s): -Thoroughly clean dry storage room floor. Repair/replace floor in dry storage room so that it is smooth, impervious and capable of being washed.
-Clean food preparation areas and shelving to remove food debris. Correction date: Feb. 16/18

Comments

-Handwashing sink supplied with liquid soap and paper towel
-High temperature dishwasher met sanitizing requirements. Temperature at dish surface was 74.9C measured with min/max thermometer.
-Bleach sanitizer solution (100-200ppm) present for sanitizing food contact surfaces.
-Cooler temperatures were 4C or colder
-Freezers were functioning. Food was maintained in a frozen state.
-Hot holding of rice and miso soup was 60C
