304 - Premises not free of pests [s. 26(a)] Observation: Dead cockroaches observed in sticky traps and in other areas of the kitchen (see code 306 for details). A professional pest control company is onsite regularly, the report was reviewed during the inspection. No live cockroaches were observed today and the pest control report did not observe any either. Corrective Action(s): Continue monitoring with a professional pest control company and follow their recommendations. Comments

-Time tracking implemented for pearls. However, it should be held for 2 hours, not 4 hours. Ensure that this change is implemented. Hand sinks were supplied with hot and cold water, soap and paper towels. All coolers were < 4 C. All freezers were < -18 C. Temperature records were up to date. Bleach sanitizer in the 3-compartment sink and in the sanitizer buckets was measured at 100 ppm. General sanitation was satisfactory.
