Observation (CORRECTED DURING INSPECTION): Ice scoop observed stored in a container with chopsticks and other items. Ice scoop must be in a separate sanitary container to be protected from contamination. Operator provided a separate clean container only for ice scoop.

Routine inspection

Temperature control:
- All cooling units measured at or below 4 degree C. All freezer units measured at or below -18C. Thermometers noted in all units.
- Walk in cooler measure below 4C.

Note: dust noted on compressor fan and the wall.Also, food debris and build ups noted on the floor. Clean and maintain walk in cooler.

- Hot holding units for rice, soup measured at or above 60C at the time of inspection. Precooked chicken hot holding over the flat grill during lunch rush was discussed. Ensure hot holding cooked chicken below 60C is limited under two hours.
- Rice scoops noted in a clean container with cold water and the water is to be changed every 4 hours. Usage of ice slurry recommended.
Sanitation:
- Hand washing stations provided with hot/cold running water,liquid soap and paper towels in dispenser.
- Sanitizer in spray bottles available in front and in the kitchen. 100-200 ppm chlorine residue detected in the solution. Spray bottles properly labeled. Cutting boards are to be sanitize after each task.
- General sanitation is overall good.
- No obvious sign of pest activity noted at this date.
- Ice maker noted clean. Ice scoop storage discussed.
- Dishwasher final rinse water registered at or above 71C at the plate surface.
- 2-comp sink maintained.
- Floor observed to be clean and maintained.
