Observation: High temp dishwasher measured during two cycles and only reached 69C and 67.4C final rinse temperature at the plate. Hot water tank water temperature was measured at 42.5 Celsius.
Corrective Action(s): Dishwashing was ceased and hot water tank setting increased. Hot water measured 44C and final rinse of dishwasher measured at 76C at plate. Ensure that dishwasher temperatures at manifold are accurate, if not, repair.

All freezers maintaining foods at -18C or colder.

Handsink and washrooms had soap and paper towels.

Ensure chlorine bleach sanitizers are prepared at 100ppm concentration. Note: one quarter capful of bleach in one litre of water achieves this.
