Person in charge while operator/owner is absent now has FoodSafe; he showed proof of FoodSafe certification. Ensure to keep a copy of your FoodSafe certificate and the owner's FoodSafe certificate on site at all times for verification.
Thermometers are now present in all coolers (the prep cooler, the bar cooler, the walk in cooler)
Walk in cooler was at 3.9 deg C at time of inspecion

**Begin taking temperature readings at least once daily for your 3 coolers + freezer. This will provide a written record to show that your equipment is functioning properly from day to day (ie. coolers <4 deg C and freezer at <-18 deg C). Template has been provided to operator at time of inspection.
