Observation: Build up of dirt/ mould noticed on the fan cover in the deli storage cooler located near the double sink.
Corrective Action(s): Remove the fan cover and clean thoroughly. Clean all interior shelves to remove food spills.(By March 10, 2019)

Observation: The sandwich preparation cooler registered 49 F at the time of inspection. The temperature log readings also indicate higher temperatures for this cooler.
Corrective Action(s): Repair or service the cooler as necessary to ensure that it is capabel of maintaining all food items at 4 C/40 F or below at all times. Corrective actions must be taken when cooler temperature reads warmer than 40 F/4 C. ( Immediately)

Comments

Significant improvement noticed in the general sanitation of equipment, floors and cleaning procedures compared to previous inspections.
A barrier has been installed between the deli cooler and floor to prevent food debris from falling under the cooler. good.
All cooler vents appeared clean at the time of inspection. Good.
All items in the dry storage section are now stored off the floor.Good.

Following items require your attention:

1. Clean floor underneath the sandwich preparation coolers. Clean the wiring housing underneath the sandwich display cooler.
Ensure to cover the wiring housing located underneath the sandwich display cooler to prevent food debris from falling in the housing.
2. Regular cleaning required for the fan covers and walls in the main walk-in cooler.
3. Milk/cheese storage section of the open display cooler registered 5.5-7 degrees C at the time of inspection. Repair or adjust the cooler so that all dairy items
are maintained at 4 C or below. Recommended placing another thermometer especially near the milk jugs.
4. Ensure that sanitizer solution ( a bucket containing 200 ppm chlorine bleach-1 oz bleach per gallon of water) is available at all times in the deli area.
5. Please submit a revised copy of the sanitation plan outlining cleaning procedures for all coolers, ice maker, meat slicers and other food equipment.
