Observation: - The shelving rack + floor beneath bags of flour have food accumulated on it. This will attract pests. Remove the bags of floor from the rack, and clean the rack and floor beneath it. Date To Be Corrected By: November 9, 2018.

Observation: - The waste pipes under the 3-comp. sink in the dishwashing area are leaking. Water is pooling on the floor or in buckets. This will harbor pests.
Repair/replace the broken pipes, so they are no longer leaking. Date To Be Corrected By: November 9, 2018.

Observation: - 1) Floor tiles in the kitchen area are cracked, loose or have missing grout. Food is accumulating in these areas and the tiles are not cleanable.
2) Walls in the dishwashing area have dents or scrapes in them, exposing the drywall. The walls are not sealed or cleanable.
Replace all broken /cracked tiles with new ones. Fill in missing grout and seal /service all tiles. Repair + paint the damaged walls so they are level, smooth + cleanable. Date To Be Corrected By: February 1, 2019.

Comments

General
- Coolers 4C or colder; freezers -17C; hot holding units 60C or hotter; and thermometers present.
- High temperature dishwasher had rinse cycle temp. of 73C, at the plate's surface, as per max/min thermometer.
- Bleach sanitizer in spray bottle had [Cl2] of 200ppm.
- All foods stored in food grade containers; covered; in groups; raw proteins separate or below RTE foods; and 6" off the floor on shelves or racks.
- No expired foods in use. FIFO rules followed.
- General sanitation is good. Improvement needed in mentioned area.
- Exhaust canopy to be cleaned in December 2018.
- No signs of pests.
- FoodSafe certified staff present. Cert. expires 2020, owner will be completing refresher course.

- A follow-up inspection to occur Nov. 9/18 or later to ensure the broken waste pipes have been fixed.
