Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (50 ppm quats measured from all 3 sanitizing buckets. Manual dishwashing set up with 100 ppm quats available. Staff indicated all quats solutions are prepared this morning. Improper santiation allows pathogen survival.)

Followup inspection to Rpt # F232160:

200ppm quats available for use in all 3 containers. Wiping cloths stored in solution when not in use. Change this solution frequently.
Quats solution in containers filled from 3 compartment sink. 200ppm quats available for use in sanitize sink.
Preparation cooler inserts at or below 4 degrees C.
Low temperature dishwasher registers 50ppm chlorine during the final rinse cycle. Test strips available for use.

Pest control services conducted on June 1, 2018.
- Temporary flashing placed to seal gaps between the floor and baseboard in the dining area.
- Door sweeps to be installed for two front doors by contractor.

***Focus cleaning efforts around the utility sink and back food preparation area. Clean up any spills and food debris that falls onto the floor immediately.
Clean underneath the shelves on a daily basis. Some droppings still observed underneath the shelves and around dishwasher. Thoroughly clean and sanitize these areas.

Pest control technician has placed additional traps and glue boards for monitoring rodent activity. No rodents observed caught in mechanical traps or glue boards.
