Walk-in cooler ready to eat and raw food items observed to be stored separately, not in contact with each other on storage shelving.

Dishwasher staff observed wearing colour coded gloves for handling soiled dishware (green gloves) and handling clean, sanitized dishware (orange / yellow gloves) to avoid cross contamination of clean dishware.

Sanitizer containers found to contain 200 ppm Quaternary Ammonia sanitizer throughout back kitchen and cooking line.

Rags temporarily outside of sanitizer along cooking line were tested to show 200 ppm Quaternary Ammonia residual indicating they are being used with sanitizer frequently.

Kitchen cleaning of ceiling vent area and under ice machine has been conducted. Ensure frequent cleaning of these locations to maintain sanitation consistently.

Reviewed hand hygiene and safe glove use procedures with manager.
