Comments

A routine inspection was conducted, the following observations were made:
- Coolers were 4C or colder; freezer was -16C or colder; food in hot holding units were 60C of hotter; thermometers present; and temperatures checked daily.
- Low temperature dishwasher had [Cl2] of 100ppm; Quats sanitizer in spray bottles and cloth buckets were 200ppm strength.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Food storage practices done correctly. Foods stored in food grade containers; covered; labeled; date coded; in groups to prevent cross contamination; stored 6" off the floor on shelves and platforms; and raw proteins stored on lowest shelves below RTE foods.
- Food handling practices done well. Utensils used to handle foods; disposable gloves thrown away when a new/different task in being done; and hands washed prior to putting on new gloves.
- No expired foods in use or for sale.
- FoodSafe certified staff present.
- General sanitation level has been maintained and is good. No signs of pests.
- General structural improvements needed due to wear and tear. Resurface and seal all walls that have peeling paint or dents. Install and seal missing corner protectors.
- The 3-compartment sink has a leaking drain pipe, and a bucket is catching the leaking waste water. The owner is aware of this and has scheduled a plumber to repair the leaking pipe. Ensure staff are emptying the bucket every night to eliminate pooling water, which is a source of water for pests.
- As a reminder, the exhaust canopy requires to be professionally cleaned by the end of this month and the fire suppression system needs inspection.
