Follow up to report MBEK-CSRUEJ.
Low temperature dishwasher measured 50 to 100 ppm chlorine in the rinse residual at the utensil surface.
Bleach water sanitizer available at 100 to 200 ppm chlorine in buckets in front and back areas. Wiping cloths stored in buckets when not in use.
Scoops stored safely at time of inspection.
Chicken was observed being cooled in shallow layers. It was stated that chicken cooked was cooked today (~4 to 5 hours ago); internal temperature at 6 to 7 degrees C. Note: Cooler at less than 4 degrees C. Reminder to ensure that potentially hazardous foods are cooled from 60 degrees C to 20 degrees C within 2 hours or less, then from 20 degrees C to 4 degrees C within the next 4 hours or less. A probe thermometer is available on site to check internal temperatures; however, display gauge is not clearly visible due to cloudiness. Ensure a calibrated probe thermometer that is in good working order and that is accurate to 1 degree C is available on site for checking internal food temperatures.
No improper thawing practices observed at time of inspection.
No use of cardboard as a food contact surface observed at time of inspection.
Equipment and utensils stored in clean condition.
Temperature records noted for June 13th; however, one cooler (sushi cooler with sliding doors) is not noted on the records and is missing a thermometer. Provide a thermometer for this unit and include in temperature records.
