Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)] (
1) Food debris, stains, and grease found accumulated on handles of equipment; on shelving units; on shelves in cupboards and coolers; on legs of equipment; undersides of tables and sinks; and in-between cooking equipment. The accumulation of food will attract pests.
2) The exhaust canopy is required to be professionally cleaned (January 2016). Failure to have the canopy professionally cleaned is a fire hazard as grease accumulates in the interior of the exhaust duct.)
Comments

A follow-up inspection was conducted, the following observations were made:
- Exhaust canopy has been professionally cleaned, next cleaning due in November 2016
- All equipment surfaces have been cleaned. Routinely clean these areas to avoid a big "clean up".
- Floors and walls and been scrubbed clean, good job. Routinely clean these areas to avoid a big "clean up".
- The 3-compartment sink faucet was fixed. Running hot and cold water exits the faucet and large containers can now be manually washed. Food can be served on washable dishes.
- All the plastic, protective covering have been removed from the dishwasher and the sides of sinks.
- The cheese quesa sauce and tomato sauce in the hot holding unit was above 60C. The container was submerged in hot water.
- A designated area for staff to store their belongings has been made.
- All violations have been addressed and corrected.

In order to ensure the salsas, in the front assembly cooler, are 40F throughout the product it is recommended that the containers are only filled half full, or do not store so many containers in the cooler below. Too many containers could be restricting the cold air from circulating up and around in the cooler.
