Observation: 1. Observed vegetable dicer and can opener with significant food debris build up. Accumulation of debris over extended period of time noted.
2. Undercounter door handles and inside had food debris and grease accumulation
Corrective Action(s): Required operator to remove them, disassemble, clean and sanitize them prior to re-using. Regular cleaning must be done. All coolers must be cleaned and sanitized. Ensure to clean the handles and insides as well.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher had 0ppm at the end of the final rinse cycle. Chlorine sanitizer bucket was almost empty and the chlorine had dissipated (solution was clear).
Corrective Action(s): Required operator to use house hold bleach instead until a new bucket is provided. Ensure to have extra stock of sanitizer available at all times. Operator connected the bleach bottle, primed the machine. 50 ppm of residual chlorine after final rinse cycle detected at the time of inspection

Observation (CORRECTED DURING INSPECTION): Only hand washing station in the kitchen was blocked off with a cutting board.
Corrective Action(s): Required operator to have the hand washing station always available. Operator removed the cutting board at the time of inspection

Hot holding units not in use at the time of inspection; ensure to preheat them to minimum of 60 C before putting hot foods in.
No sign of pests noted at the time of inspection; most recent pest report available reviewed (June 23 2023). No pest activity noted. Another visit will be made on August 3 2023. Please email a copy of the report to the district inspector.
