Comments

Hot and cold running water, liquid soap and paper towels available at all hand sinks. The fridges and ice cream freezers were not not plugged in as the porch kitchen is not yet open for the season. Ensure to complete the following cleaning tasks prior to opening the porch concession. 1. Clean and wipe all shelves and under counter storage shelving to remove any dust etc. 2. Clean interior surfaces of all coolers and freezers 3. Clean all food processing equipment such as blenders and potato fries cutter 4. The fume hood must be serviced by a professional vent cleaning company. Ensure thermometers are available in each cooler for daily monitoring of temperatures. Bleach sanitizer available at 200 ppm. Ensure to train all staff in proper labelling of all cleaners and sanitizers and proper cleaning procedures.
