Observation (CORRECTED DURING INSPECTION): Scoops in server station stored in quats sanitizer solution. This is practice is unacceptable as solution can contaminate food product as scoops are not air dried in between use. In addition, sanitizer will not be effective when solution becomes soiled with food residue. This is a repeat issue from previous inspection.
Corrective Action(s): Discontinue above practice of storing in use scoops in sanitizer solution. Store scoops in ice water (replensihing ice when it melts) or store designated scoop in food product at appropriate temperature (4C or colder or 60C or above) ensuring handle does not contact product. Review proper procedures with all staff. Note: Correct procedures were in place at back of the kitchen.

Observation: -Food debris noted on floor under shelving in dry storage area.
Corrective Action(s): -Remove all (moveable) items from dry storage room floor and thoroughly clean entire floor area to remove food debris. Re-organize shelving to allow sufficient space for all items to be stored on shelving units. Keep floor area clear to facilitate cleaning and monitoring for pest activity. [Correction date: July 2/18]

Note: Milk crates are not ideal for storage. Although the food items are stored off the floor, debris collects underneath and restricts ability to keep floor clean.

-Handsinks were supplied with liquid soap and paper towel.
-Coolers were at acceptable temperatures (4C or colder):

-High temperature dishwasher functional and met sanitizing temperature required. Final rinse was 73.4C at the dish surface.
-High temperature undercounter dishwasher (used for glasses) functional and met sanitizing temperature required. Final rinse was 76.7C at dish surface. Staff member on duty responsible for dishwashing was knowledgeable about sanitizing temperature and monitoring using external gauge.
-12.5ppm Iodine residual present in bar glasswasher rinse cycle to sanitize glasses. Test kit present for checking. *This should be checked daily prior to opening.
-No signs of pest activity noted at the time of the inspection. Pest control contract in place with service every 2 weeks. Reports on-site. Last service was 14-Jun-2018.
