3. Clean surfaces, including tables and walls around them, where food splashes are observed

Observation: Observed staff preparing foods (cutting tomatoes and potentially marinading raw chicken) on a table with wheels by the upright cooler in the back area (across from the staff desk) which is not an appropriate location for handling food as there is no handsink in close proximity.
Corrective Action(s): All food handling (cutting of vegetables and marinading meats) must be done on the designated food preparation table by the handsink.

- 50ppm chlorine detected in low temp dishwasher **Ensure to swap out empty detergent/rinse aid/sanitizer in a timely manner
- Temperatures of refrigeration units are adequate
- Coolers are equipped with thermometers
- Hot holding foods (rice, chili etc) measured >60C
- Cold holding foods (cheese etc) measured 4C
- Raw meats are stored on the bottom shelf in the walk-in cooler
