Observation (CORRECTED DURING INSPECTION): 1) Cheese insert in the prep cooler was over stocked where temperature at the bottom was at 3C and temperature at the top was at 13C. Operator restocked cheese 2 hours ago.
2) Garlic butter (36C) and Garlic oil (32C) observed on counter top. Operator reports these were removed from cooler 1 hour ago.
Corrective Action(s): 1) Operator removed top half of the cheese and relocated to working cooler. Do not over fill inserts of food to ensure food is kept below 4C at all times
2) Operator relocated Garlic Butter and Garlic Oil at the time of inspection. Do not keep garlic oil or garlic butter in room temperature as it can be a potential source of C. botulinum toxin.

3) Remove all ice, clean, and sanitize ice machine.
