Observation: - Heavy grease, grime, and food debris accumulation noted on stove and oven surfaces (exterior and interior).
- Food debris and grease accumulation observed on food storage containers.
- Heavy grease and old food debris/ food scraps accumulation observed on and inside equipment storage containers.
Correction: - Thoroughly clean and sanitize the above listed items.

Comments

- Most of the required cleaning has been completed.
- Operator is continuing to work on degreasing heavily accumulated/ burnt on grease of oven surfaces.
- Operator is working on cleaning hard to reach area under dough mixer (affixed to the ground).

**Continue to work on regularly maintaining a high level of sanitation throughout the premises.
**Provide a copy of the Sanitation Plan on-site for reference. Document to be reviewed during the next inspection.
**Premises does not have a commercial ventilation exhaust system. The production of grease laden vapours is not permitted.

- Continue to monitor for rodent activity. Report new and/ or increased activity to your pest control company. Follow all recommendations provided by your pest control company.
- Operator advised that work has been scheduled to fill gaps/ holes along the wall.

- Operator has ordered chlorine test papers. Use chlorine test paper to verify sanitizer concentration. (100-200 ppm chlorine bleach sanitizing solution = 1 ounce bleach + 1 gallon water)

- Handsink accessible and has hot and cold water, liquid soap and papertowels.
