Observation (CORRECTED DURING INSPECTION):
Bins for sugar, salt and dried hot peppers in dry storage area were uncovered.
Corrective Action(s):
Place covers on bins and ensure all food products are protected from contamination with food-grade material.

Observation:
1. Floor in walk-in cooler has dried pizza sauce, food particles, and debris throughout.
2. Ceiling area right before fans in walk-in cooler have accumulation of dust.
3. Floor around water tank has spillage of oil and grease accumulation.
4. Ceiling panels and light covers in cooking area are full of dust, debris and grease.
5. Inside of back bay door has accumulation of dust.
Corrective Action(s):
Clean all the areas listed above. Ensure you are following your sanitation plan for seasonal and hard to reach areas along with daily and weekly cleaning. To be corrected by July 11, 2016.

Comments

- All handwashing stations fully equipped with soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
- Walk-in cooler = 2C
- All prep coolers = below 4 degrees Celsius
- Display freezer = -18C
- No hot holding. Hot holding unit not in use.
- Front display drinks cooler = 3C
- Bleach sanitizer in bucket = 100 ppm. Wiping rags stored in bleach solution - good.
- 3-compartment sink used for manual dishwashing.
- Bleach sanitizer for manual dishwashing = 200 ppm.
- Washroom clean and sink fully equipped with soap, paper towels and hot/cold running water.
- No indication of pest activity at the time of inspection.
