Comments

-Sushi cooler was at 4C.
-Upright cooler in sushi area was at 4C.
-Upright cooler in customer area was at 4C.
-Unercounter bar cooler was at 2C
-Chest freezer in sushi area was at -18C.
-Chest freezer in back storage area was at -20C.
-Hot holding of rice and soup was greater than 60C.
-Sushi rice had a pH of 4.0.
-Hot potentially hazardous foods cooled in shallow trays. Chicken and beef cooked yesterday were at 4C.
-Deep fried tempura is supplied from a facility in the next complex (every 2 days)
-High temperature dishwasher had a final rinse temperature of 71C on the dish surface (minimum 71C required for proper sanitizing).
-Bleach sanitizer pail was at 200ppm.
-Handwash station easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-General food storage practices good at the time of inspection. Foods properly stored off the floor and covered.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and well maintained.
