Make sure cooks are only taking out small portions of food at a time and that any food over 4C for greater than two hours is discarded.
All foods must be labeled before placing in either the walk-in coolers, freezers or dry storage area . Labels must include date prepared/re-packaged and contents.

All refrigerator and freezer temperatures meet requirements; both dishwashers sanitizing at >71C at the plate surface; general sanitation and food handling satisfactory, no indications of insect or rodent infestation!
