Observation (CORRECTED DURING INSPECTION): Frozen raw fish & raw chicken were stored on shelve above produce and ready-to-eat food in the stand-up freezer.
Corrective Action(s): To prevent the risk of cross contamination of food from meat juices, always store raw meat and fish in bottom shelves and ready to eat food on top shelves. Operator moved the raw fish & meat from top shelves at the time of inspection.

Observation: *REPEATED VIOLATION*
Build up of grease, dirt and food debris noted throughout the facility, mainly behind the cooking line, along the walls and under the food prep table.
Corrective Action(s): Remove the build up and maintain the facility in good sanitary condition.

Observation: Operator did not have valid FOODSAFE Level 1 or equivalent. As per the operator, his certificate expired recently. No other staff on duty had FOODSAFE Level 1.
Corrective Action(s): Ensure that operator or at least one staff on duty has FOODSAFE Level 1 or equivalent. Schedule the staff accordingly or take FOODSAFE Level 1 or equivalent training.

Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature (coolers to be at 4C or less, freezers at -18C or less):
- Walk-in cooler at 3C
- Prep cooler at 3C
- Front freezer at -23C
- Freezer at -12C
- Pop cooler at 4C
- Sweet display coolers at 4C or lower.
- Golgappa prep cooler at 2C.

Storage:
- All food items were stored at least 6" off the floor.
- All products were found either in original packaging or covered inside coolers.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash station (x2) adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer spray bottle available and the concentration of bleach noted at 200ppm.
- Low temp mechanical dishwasher in place. The concentration of chlorine residual noted at 100ppm.
- Knives were kept in sanitizing bucket. The concentration of bleach noted at 200ppm. Good.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.
