Corrective Action(s): Food within cooler has been discarded. Cooler #36 is not to be used until replaced/repaired and and store food at 4°C or less.

2.) Observed dust accumulation on fan within the walk-in cooler and between two standing coolers (on the wall) in the prep-area.
Corrective Action(s): 1.) Clean and remove grease/debris in the area.
Remove and clean dirt and potatoes found below shelves in dry storage area.
Minor cleaning required throught premises in "hard to reach areas" and around legs of equipment.

NOTES
-Discussed with operator- obtaining thermometer to check high temperature dishwasher is at 71°C. Will follow-up on next inspection.
-Hand-sink fully-equipped with liquid soap, hot/cold water and paper towel
-No evidence of pests at time of inspection.
-Sanitizer solution (quats) found at 200ppm
-All other coolers and freezers found at 4°C or less and -18°C or less respectively
-Dishwasher (high temp) found at greater than 71°C.
