Inspection conducted to follow up outstanding items from previous routine inspection (ABAI-BFFRJE):

Premises has complied with the closure order requirements:
- All staff have been registered in foodsafe (remember to request marks from the instructor as the actual certificates take longer to be processed. Any staff that did not pass will need to retake the exam/course)
- All cooler units were all less than 4C, specifically the walk in cooler, under counter cooler across the cookline and the upright sliding two door cooler. Reminded staff and operator to not overstock the undercounter cooler. Keep up temperature logs and ensure units are not above 4C.
- Hot water tank has been repaired. Premises has hot water.
- Operator will continue to hot hold tempura as per existing procedures. A sign will be posted above the hot holding unit reminding staff to not turn the unit off.
- Operator has provided bleach and containers for sanitizer at each work station (server station, back kitchen, sushi bar). A sign will be posted at each station reminding staff to check and change sanitizer every two hours. Operator to obtain test strips for each station as well.

Closure order rescinded. Premises may reopen and resume food preparation/service. In the future if there are any operational issues with sanitizer use or hot holding, progressive enforcement will apply (ie. restricted menu, issuance of violation tickets...etc).

Required cleaning has also been completed. Continue to maintain a high level of sanitation and organization in the premises.
